It is Dum aloo masala. It helps to enhance the taste of the dish.
Ingredients
Coriander, Chilli, Turmeric, Ginger, Cumin, Black Pepper, Onion, Garlic, Dry Mango, Postadana, Salt, Black Cardamom, Green Cardamom, Nutmeg, Mace, Cloves.
Recipe:
Heat 2 tbsp oil in a frying pan and saute the boiled poatatoes till lightly browned and keep aside. Now in a pan add finely chopped onions and satute till brown, then add garlic-ginger paste and tomatoes, after 2-3 minutes add ASHOK DUM ALOO Masala, Red chilli powder and Turmeric and stir till oil seperates from the mixture. Add yogurt and stir the mixture well, now add the sauteed potatoes and green chillies till potatoes have been coated entirely with masala, finally add water and salt as required and bring it to boil. Garnish with coriander and serve.
